"Super Evil" Bacon Meatballs

Hello All and Happy Tuesday!  Prayers to those that need them.  Thanx a lot for stopping by.  Today I've got a versatile one for you.  Meatballs, ok, how many different ways can you use them?  LOTS!  I used them in Roasted Garlic Parmesan Sauce with angel hair pasta and garlic bread to round it off.  At the end of the meal though with bread left..........somehow some meatballs made it in there and I'll tell you.............best slider ever!  Lol!  So these beautiful little meatballs can be used in anything and they will make it better every time! The evil in the name comes from it's spice, crushed red pepper to be exact.  (Well, and the fact that they have bacon in them also)  In order for me to enjoy these little puppies however, I had to omit that.  Still amazing.  And again, so versatile, make 'em hot, don't make 'em hot! "Super Evil" Bacon Meatballs

1 lb hardwood smoked bacon
12 oz ground beef, 80% preferred
8 oz ground pork
2 tsp. salt
2 tsp. smoked paprika
2 tsp. dry oregano
1/2 tsp. ground fennel (wasn't able to find to purchase)
1/2 tsp. freshly cracked black pepper
1/2 tsp. (or more, to taste) crushed red pepper (Hot!)
1 egg

Cut bacon into 1" pieces.  Pulse in a food processor until it is evenly ground.  In a large bowl, combine bacon with remaining ingredients.  Scoop into 1 1/2" meatballs, making sure not to compress while shaping.  Place on a parchment lined pan, and chill, uncovered, for at least two hours.  Later, heat a non-stick skillet over medium heat.  Working in batches, add meatballs and brown thoroughly on all sides.  Bake at 400° until meatballs reach an internal temperature of 160°, about 10-15 minutes.

Meatball Sub on a Stick

Happy Thursday residents!  Prayers to those that need them and love to us all! Speaking of love.....FOOTBALL is almost back!  Time to start building this years favorite finger foods.  I ran across this last week and they were exactly what I expected them to be.  Simple, easy and tasty.  So this will not only make all the football fans happy but also the kids at your Asylum!  Make sure to try them out this weekend!  See you next week.  Enjoy!!

Meatball Sub On A Stick

Ingredients:
1 bag Farm Rich Meatballs (Original, Turkey or Italian)
1 tube breadstick dough
2 tbsp. Italian seasoning
1 cup Mozzarella cheese
1 cup marinara sauce
12 bamboo skewers (like the ones you use for caramel apples)

Directions:
NOTE: The meatballs come frozen so you'll need to defrost them in the refrigerator overnight or in the microwave before making this. You want them soft enough to be able to insert onto the skewers. For one tube of breadsticks, you'll need 36 meatballs.

Preheat oven to 375F.
Line 2 baking sheets with parchment paper.

Unroll dough and separate into 12 breadsticks. Thread one end of a breadstick on a skewer; add one meatball then thread the dough around the meatball. Repeat threading with breadstick and 2 additional meatballs.

Place about one inch apart on cookie sheet. Repeat with remaining breadsticks and meatballs.

Bake for about 20 minutes. Meatballs should be cooked through and the breadsticks a nice light, golden brown. You may need to rotate the trays halfway through to ensure even cooking.

Once finished, take out pans and sprinkle the meatballs with mozzarella cheese and top that off with a sprinkle of Italian seasoning.
Put the meatballs back into the oven for another 3-4 minutes or until cheese has melted.

Gently heat up some of your favorite marinara sauce and serve with the meatball skewers for dipping!

Spaghetti O's and Meatballs

Ever want to eat those things you did as a kid, but know how crappy some of those things were? Especially if they came from a can or a box.

Homemade Spaghettios and Meatballs

yield: 6 SERVINGS cook time: 10 MINUTES total time: 6 HOURS

INGREDIENTS:

40 meatballs
2 can (15oz) tomato sauce
32oz beef broth
2 tsp oregano
1 tsp garlic salt
1 tsp dried basil
1 tsp kosher salt
8oz ditalini noodles, dry

DIRECTIONS:

In a large slow cooker, add frozen (or fresh) meatballs. Top with sauce, broth, oregano, garlic, basil and salt. Simmer on low, covered, for 5-6 hours.
Half hour before serving, add the noodles. Stir into the sauce, cover, and let cook. Serve dinner with breadsticks and salad! ENJOY

Authentic Italian Meatballs

Our Beautiful Granddaughter will be visiting the rest of her family starting this weekend so I'm not spending much time on this!  She requested spaghetti and meatballs for dinner, that's what she shall have.  This is the go to meatball recipe but I don't cook it slow in the sauce.  I like to brown them, then finish them in the oven. The recipe is great, that's we why share.  Thanx for stopping by.  Hope all is well in your Asylum's!

Authentic Italian Meatballs

DIRECTIONS

  1. Mix all ingredients in a large bowl by hand.
  2. Use your bare hands for best results.
  3. Roll meatballs to about the size of a golf ball.
  4. Drop raw meatballs into large (I use a stock pot) pot of sauce.

  5. Simmer for about 3 hours.

Aunt Kathy's German Meatballs

So last week Saucy Irish was in a bit of a funk and I had sick kiddos so we shared a lot of recaps over at the Facebook Asylum.  There are so many new faces and we wanted to show them what they had missed out on. So we apologize if you were looking for us here!  Saucy's granddaughter showed up (which brought her out of her funk a bit) and then you know those sick kids and how we teach them to share? Well, they shared their illness with me and it is FIVE days later and I still feel shaky and just want to sleep. But Saucy and I are also challenging each other to get back to our healthy selves (not that today's recipe will help) So here I am up, dressed and getting ready for the monthly doctor appointment.  Thank goodness my chauffer is home today to help me get groceries and take me out for breakfast (I love my hubs)!

At Christmas time I shared a recipe for Sweet and Savory Meatballs.  It was similar but not quit my Aunt Kathy's recipe.  Awhile back she shared it with me and as always life got in the way and I lost her recipe in my pile. {If you want recipe organizing tips check out this post} So today when I woke up and the first thing I saw was a picture of her on Facebook I knew it was time to share her recipe!  So Aunt Kathy my apologies for being so late with your recipe!  Saucy Irish and I believe that things like this happen for a reason.  So Aunt Kathy know that I am thinking about you today and sharing your yummy recipe with the world (or the 5 people who read this anyway and you are one)!

Aunt Kathy's German Meatballs
5 lbs regular meatballs-frozen
2 14.5 oz cans whole berry cranberry sauce
1 32oz  sauerkraut
1 cup BBQ sauce
1/2 to 1 cup brown sugar
(it depends on how sweet your BBQ sauce it)

Mix all ingredients. Crockpot 3 to 4 hours.  The longer it cooks the better it is!  This recipe is easy to cut in half!

Sweet and Savory Meatballs

My hubs' Aunt made these for our family gathering and all of my Residents liked them! I can't wait to try them. I don't have her exact recipe but I found a similar one on the interweb  (hubs is an IT guy and that's what he calls it;).  If or when I get her recipe and permission I will update this!

Ingredients
3 pounds lean ground beef
2 packages dry onion soup mix
1 1/2 cups dry bread crumbs, soaked in 1 1/2 cups water
3 eggs
1 (16-ounce) package refrigerated sauerkraut, drained
1 (16-ounce) can whole cranberry sauce
1 (12-ounce) bottle chili sauce
1/2 cup brown sugar, packed
1 cup water

Directions
In mixing bowl combine ground beef, soup mix, prepared bread crumbs and eggs. Mix well and form into 2-inch diameter meat balls. Place in a 13 x 9 x 2-inch baking pan
Meanwhile, combine sauerkraut, cranberry sauce, chili sauce, brown sugar and water in medium sauce pan; bring to a boil and simmer for 5 minutes.
Pour sauerkraut mixture over meatballs and bake, uncovered, at 350*F (175*C) for 1 to 1 1/2 hours.
Makes 12 servings.

Happy May!

Alright crazies, I have decided to just go all out crazy today!  I have no recipe for you.  That's right, you read it right and that's what I said.  LOL.  Instead I'm going to tell you what I threw together for dinner last night.  I'm going to do this because we have ALL had that moment in the kitchen when even a recipe can't help us.  I don't have that spice.  Or crap I forgot to pick up diced tomatoes.  Or even, you know, I'm not really feeling that right now!  I think all this stemmed from Spicy and I trying to feed her company on what she had at home.  Unfortunately for her, she must hit the grocery store.  I happen to love the grocery store.  I am even blessed enough that my hubby will go with me, if I ask real nice!  He doesn't mind though, as he says "I reap the benefits!"

Ok, all that out of the way.  I had 3, yes 3, packages of thawed ground chicken!  We love ground chicken, with enough flavor it can stand beside beef in our house.  So, ok, I'm thinking chicken burgers.  After adding all my ingredients though it was quite a sticky mess, so I pulled out my trusty scoop and proceeded to make meatballs.  Oh, and where we ended up will tickle your taste buds.

So in the mixing bowl I put the three pounds of ground chicken.  I knew I needed a binder so I added two whole eggs.  Then comes the much needed flavor.  I added roughly 3 tablespoons of minced garlic, 1 teaspoon each of salt and pepper and roughly 1 teaspoon of cumin.  I know sounds weird, what can I say lol.  It just didn't seem like enough so I went back to the fridge and looked and looked and looked LOL.  Then I found my container of shredded parmesan cheese.  I think there was about 3/4 of a cup left and so yes, I dumped it in.  Mixed it all together into what became a terrible sticky mess. LOL.

So I made the meatballs with the scoop which left them flat on one side.  That worked to my benefit. I put them in an oven proof dish and cooked them at 350 for approximately 15 minutes till they were cooked through.  This is going to be different for everyone.  Depending on your oven, the size of your meatballs and even the size of the pan you use.  After they cooked up very nice and to a golden brown I had to figure out what I was going to do with them.

My son walked into the kitchen while I was contemplating and asked what I had.  As soon as I told him he said oh man they look like they would make a great chicken meatball sub...................and so dinner was born!  LOL.  He even requested Stubbs Barbecue sauce as it is minimally processed, with very few ingredients and tastes great!

So, there it was.  I opened a whole bottle of the Stubbs (you of course could use your family's favorite) and put it in a sauce pan and added the meatballs. They simmered for about 10 minutes.  Cut the sub rolls down the center and placed meatballs and sauce across them.  They sat perfectly because of being flat on one side lol.  Then I added a layer of finely shredded mild cheddar cheese!  With the roll tops also on the pan I put it into my already heated 350 oven and let the cheese melt.  At the table a small bowl of diced onions.  And of course a bottle of hot sauce!  The ooooh's and aaaaah's had me almost blushing!  Steamed cauliflower on the side and it was an easy amazing meal!  WITH NO RECIPE!

I know you're thinking, well that's you not me blah blah blah!  I have faith in you crazies! :D.  And even if you can't figure it out, give us your list of possible ingredients and we will see what we can do with it!  Creating this meal was alot of fun and tasted great and I cleaned out the fridge.  This one is right up Spicy's alley I can't wait for her to read it.
