Caramel Cream Cheese Apple Dip

Still looking for easy and quick superbowl ideas?  Well I'm sure our blog is full of them and here's another one!

Saucy and I are having a rough week so thanks for taking the time to come see us.  This blog and our Facebook page makes us very happyand is a place e love to hang out.  So thanks for sitting down at the crazy Asylum Kitchen table with us!

Caramel Cream Cheese Apple Dip

Ingredients

2 8oz packages cream cheese, softened
1 14 oz jar caramel sauce
2-3 Heath candy bars, crushed (or use Heath toffee chips)
Serve With: Granny Smith apples, sliced
Instructions

Combine cream cheese and 1/2 of the caramel sauce in mixing bowl; beat until well-blended.
Spoon cream cheese mixture into pretty serving dish.
Cover cream cheese with remaining caramel.
Sprinkle caramel with toffee chips.
Serve immediately with sliced granny smith apples.
Preparation time: 5-7 minutes
Number of servings (yield): 12

Shrimp Dip

Good Afternoon All!  Sorry about being late!  Happy Tuesday, prayers to those that need them!  Thanx for stopping by.  Today my hometown mourns the lost of one of our special people.  A gentleman who ran a seafood booth.  Doesn't sound like much, I know.  But he was a really super guy.  Would bend over backwards to make sure we were always satisfied and he gave great hugs.  He will be missed by his family, friends and community.  And the recipe I share today is one of his, one we have loved ever since meeting him.  Hope you enjoy!  The recipe is by Chuck Macin and can be found in the "Sensational Seafood Recipes and More!" by the Great Bridge Fisherman's Assoc.

Shrimp Dip

2 lbs. (26-30 count) shrimp
1 lb. Philadelphia brand cream cheese
1 lb.  Breakstone cottage cheese
1/2 c Hellmann's mayonnaise
2 Tablespoons lemon juice
6 Tablespoons green onions, diced (1 bunch=1 Cup)
1 teaspoon Old Bay seasoning
1 teaspoon garlic salt
1/2 teaspoon cayenne pepper
1/2 teaspoon white Worcestershire sauce (L&P white marinade for chicken)
7 drops of Texas Pete sauce

Peel the shrimp first and then steam with Old Bay or Cajun spices, cook until just pink.  In a large mixing bowl, add the remaining ingredients and with a hand mixer blend together until thoroughly blended, approximately 3 to 5 minutes on high speed.  Put a few of the steamed shrimp aside.  Slice in half length-wise for a garnish.  With a food processor, chop the steamed shrimp and place over the cream cheese mixture.  With a heavy spoon, gold the shrimp into the cream cheese mixture until thoroughly blended.  Serve with crackers or tasted French bread.  Makes a lot, freezes very well.  You can change it up also and use crab meat instead of shrimp.

Cranberry cream Cheese Dip

This was brought up at lunch a while back and I forgot about it!

It sounded so good and everyone was telling how this person brought it and it was ssooooo good. So I figured I better share. I found this one at Julie's Eats and Treats.

Cranberry Cream Cheese Dip

2 (8 oz) packages cream cheese, softened
1 (14 oz) can jellied cranberry sauce
1/8 c. chopped cilantro
1/8 c. chopped green onion
1/4 tsp cumin
1 Tbsp lemon juice
Instructions

Spread cream cheese on bottom of pie plate.
In a small mixing bowl beat together cranberry sauce, cilantro, green onion, cumin and lemon juice. Spread on top of cream cheese.
Serve with crackers.

Taco chip dip

Our Asylum is crazy and relaxed all at the same time. Hubs is super busy and constantly on the go for work and the kids and I are just hanging out at home enjoying the last few weeks of school.

I've been applying for jobs in several school districts but not having much luck!

Today's recipe is a part of a previous recipe I'm sure I have given you...pinwheels. I use a few or all of the same ingredients as the pinwheels, just (as always) depends on what is in my pantry and fridge.

I usually double the recipe as they go through it pretty quickly.

Taco chip dip
Taco seasoning packet (optional)
1 cup salsa
1 package cream cheese
1 cup shredded taco cheese
Chopped olives (optional)

Combine ingredients with a mixer or stir until all ingredients are combined.

Serve with chips or my favorite, wheat thins.

Eight layer taco dip

Yep eight, not seven, not 5, EIGHT!  Crazy isn't it?  Not conforming to the norms.  My mom in law makes something similar, but this is not her exact recipe.  I adapted it to what the kids and I like.  hubs wouldn't touch it with a ten-foot pole.


This is also great on top of baked potatoes!  We had some left after the big Super Bowl party and used it to top our baked potatoes last night.  It is very yummy!


Of course you can make it two layers or four, pick the layers that work for your Asylum and eat away.


EIGHT layer taco dip/potato topping


Ingredients layered in this order (or not, be crazy ;)


Cream Cheese (softened and I use two not one)
Taco Seasoning packet
Refried beans (mine had chilies in it)
Taco sauce
Sliced Black Olives
Diced tomatoes (drained)
Guacamole (I used the dip this time)
Shredded Cheese (I use the Mexican cheese blend)


I use a small baking dish and cover it with plastic wrap and store in the fridge.  We eat these with flavored Doritos or tortilla chips.
