Barbecue Chicken Bubble Up Bake

Happy Thursday all!  Friday is right around the corner, hope you have some great plans for the weekend.  Prayers to those that need them.  You'll love how easy today's recipe is.  Still working on soft food and a variety so I made this for them the other night and they both ate really well.  Had me super happy!  Good luck with it in your Asylum.  Thanx again for stopping by.  See you next week!  (I personally left out the cilantro, it's a bit too strong for us)

Barbecue Chicken Bubble Up Bake



1
lb boneless skinless chicken breasts, cut into 1-inch pieces
1
can (16.3 oz) Pillsbury™ Grands!™ Homestyle refrigerated original or buttermilk biscuits
1
bottle (18 oz) barbecue sauce
2
cups shredded mozzarella cheese (8 oz)
3
tablespoons chopped fresh cilantro, if desired

Steps

  • 1 Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • 2 Heat 10-inch nonstick skillet over medium-high heat. Add chicken; cook 10 minutes, stirring occasionally, until no longer pink in center. Remove from heat. Cool slightly, about 5 minutes.
  • 3 Meanwhile, separate dough into 8 biscuits. Cut each biscuit into 8 pieces. Set aside.
  • 4 Place cooked chicken in medium bowl. Pour barbecue sauce over chicken; stir to combine. Add biscuit dough pieces to chicken mixture; gently toss to combine. Spread mixture evenly in baking dish. Sprinkle cheese over top.
  • 5 Bake 25 to 30 minutes or until golden brown and cheese is melted. Sprinkle cilantro over top. Serve immediately.

Rib Rub

I so wanted to name today's recipe meat rub, but it just didn't sound right.  This recipe can be used on any type of meat. I honestly don't know where I found the recipe and as always it has evolved since I found it. I tried it as the original stated and the kids said it had too much of a taco taste in it. So out went the cumin. Then they said it wasn't BBQ enough, so I added more brown sugar. This is the current state and only mild hints that something is off. I know what it is but I don't want to tell them because I like it! This should be combined with a BBQ sauce after it is cooked and I think it would be amazingly over the top lock your fingers good!

Rib Rub
1/4 cup kosher salt
1/4-1/2 cup Brown sugar
1/4 cup sugar
1 TBSP each
    Garlic powder
    Onion powder
    Smoked paprika (plain works too)
    Chili powder
    Coarse ground black pepper
1 tsp cayenne pepper

I doubled and put the rub in a large ziploc bag with the ribs for an hour before grilling. They were tastier and the flavors were stronger. It also works to lay your ribs on a piece of tinfoil  (heavy duty) and place on grill then top with your rub and let it slowly cook. Enjoy my Crazies!

BBQ Crock Pot Chicken Breasts

Good Morning and Happy Thursday!!  Hope your week is going well, hang in there the weekend is right around the corner.  Today's recipe is one that many of you probably have, well at least a version of it.  We have all put lots of stuff in the crockpot and just let it cook.  This is one of those.  But with ingredients that I hadn't put together before.  It turned out great for us, especially when we added coleslaw!  Do with it what you will!  Thanx for stopping by, look forward to seeing you on Saturday!!

BBQ Crock Pot Chicken Breasts

2 lbs Chicken Breasts
1 Cup BBQ Sauce
1/4 Cup Italian Dressing
1 Tablespoon Worcestershire sauce
1/4 Cup brown sugar
Salt to taste!

Put the chicken breasts in first and sprinkle with salt.  Mix all the other ingredients in a small bowl, then pour over chicken breasts.  Cook on high for 3-4 hours (or slow 6-8 overnight while sleeping).  Remove breasts and shred, put back into sauce in crock pot and allow to cook for 15 minutes.  Trust me this part is very important the sauce thickens and adheres to the chicken!

I served them on romain lettuce leaves with bacon and coleslaw, OMG!!!! Delish!

Oh, I can't say I know exactly where this recipe came from.  I believe it was somewhere on my Pinterest but it was just written down on a small piece of paper.  !!!!  LOL

Hello Hump Day!!!!

Today's recipe comes with a warning from the Asylum doctors!!!! Please take caution if you make this recipe! For the record I have one bad ass 13 year old because this recipe would make a grown man cry (no really it did, read on)!
Ok so our Asylum Residents were sniffling and sneezing. Welcome to allergy season! So that's when I whip out the "Spicy" foods! HeeHee,  I'm Spicy! Okay, is your sense of humor broke today? 
Moving on...I had mistakenly bought two, yes two, bags of chicken wings (mix of wings and drummies). So 6 lbs needed to be made and my Residents LOVE spicy wings!
I went to the Asylum library and researched several recipes and made my own and the little residents named it.
The ATOMIC Chicken
3 lbs of chicken wings
1 TBSP baking powder
1 tsp cayenne pepper
1 tsp kosher salt
Thaw your chicken and pat dry. Combine the ingredients and toss the chicken. I put it all in a large bowl and mixed with my hands. Lay the chicken out on a cookie sheet, cover with plastic wrap and put in the fridge for 8 hours.
Place in 425° oven for 40 minutes. Now you could stop here and have pleasantly spicy wings. I loved them just like this! 
If you have a death wish by all means...continue!
2 TBSP cayenne powder
1/3  cup + 2 tsp vinegar
3 TBSP water
1/4 tsp salt
4 TBSP butter
1 TBSP brown sugar
1 TBSP honey
While chicken is cooking-in a sauce pan melt butter and add remaining ingredients. Heat to a simmer.
When chicken is cooked put in a bowl and pour sauce over. Cover and let sit for 5-10 minutes.
Then before serving make sure everyone has been WARNED and has a glass of milk! Hubs also rubbed his eye and ended up with massive pain and tears-see grown man crying.
I also used my BBQ sauce for the other 3 lbs.
1 jar of your favorite bbq sauce and a small jar (I sometimes use 2 if I want to make extra) of peach or apricot jam. Heat in a sauce pan and add to the cooked chicken wings to coat!
These are the Spicy ones! I put in a red bowl to signify that!

Is it Friday yet? No?!?!?

Can we pretend it is Friday?  Excited that my in laws are coming to do some vacationing with the guys and I!  But, I hate having to come up with meals when I know we will be out and about all day long. I get stabby crabby when I'm tired and still have to make a large meal.  So hopefully my crockpot will rescue me one night, and probably Marco's Pizza another night!

So what will I out in the crockpot? How about BBQ chicken or pork? Have I already given you this really easy recipe? 

BBQ crockpot
Meat of your choice
1 jar apricot or peach jam (Cheaper the better)
1 jar BBQ sauce of your choice (we like Garland Jack's)
Onion (dried or fresh)

That's it! Put it all in the crockpot for the standard 4-6 on high 6-8 on low. Seriously can't get any easier. Well it could but this takes just as much time as it would to make a phone call and hope your food gets there before you gnaw off your arm or pass out from exhaustion! Ok that may be a bit much, but here at the Asylum we see a lot of cases of "too tired to cook" and "why can't they cook" and "how do I teach my kids to cook, so I don't have to"! Come on you know who you are! LOL!

Ketchup or Catsup? and Honey Mustard

It is summer time and that means kids are home for lunches and you may be grilling more often!  So,  why not make your ketchup better for those hotdogs and burgers?  Who says you have to settle for the "normal"?  We sure don't around here! 

 I am a horseradish lover, so of course we needed that!  Sadly, I am the only one here that will eat it, so I cut this recipe in half.

Creamy Horseradish Ketchup
All You Magazine
 
2/3 cup ketchup
1/3 cup mayo
2 TBSP prepared horseradish

NOTE:  You can also ask for a couple extra packets of Horsey Sauce at Arby's and add ketchup!

Are you more of a BBQ lover?  This is also the recipe I use for meatloaf!

Smoky-Sweet Ketchup
All You Magazine
 
1/2 cup ketchup
1/4 cup honey
2 TBSP BBQ sauce
1TBSP Brown sugar
 
 
Pickled Ketchup
All You Magazine
 
1/2 cup ketchup
1/2 cup mayo
1 tsp Worcestershire sauce
3 TBSP minced cornichons

NOTE:  Don't know what cornichons are?  They are pickled cucumbers, sound familiar?

What about the mustard?

Honey Mustard

1/4 cup mustard
1 TBSP Honey

NOTE:  You could also add sage, rosemary or thyme to make it even better!

Now go grill, go!  When you get back we will wash the mustard, and ketchup stains out of your straight jackets!
