One-Pot Cheesy Tortellini and Sausage

Happy Thursday!  Welcome all!  Prayers to those that need them.  Today I'm sharing a recipe that is great for an easy quick and somewhat healthy dinner!  Kids even like it.  It come from the Betty Crocker website (love that place).  Of course the recipe comes with brand names but there is no need to use them.  Hope it works well for you too!

One-Pot Cheesy Tortellini and Sausage

1 lb cooked pork sausage, sliced
1 small yellow onion, diced
2 cloves garlic, finely chopped
1 jar (25.5 oz) Muir Glen organic pasta sauce tomato basil
1 can (14.5 oz) Muir Glen organic diced tomatoes, undrained
1/2 cup Progresso chicken broth
20 oz refrigerated cheese tortellini
1 cup shredded mozzarella cheese (4 oz)
6 fresh basil leaves, chopped (*see note below)

In 12" skillet, cook sliced sausage, onion and garlic 5-7 minutes or until onion softens and sausage starts to brown.

Stir in sauce, tomatoes, chicken broth and tortellini.  Cover and simmer 8-10 minutes, stirring occasionally, until tortellini is cooked.

Remove from heat; sprinkle with cheese and basil.  Serve when cheese has melted.

*My Asylum prefers I don't add large amounts of fresh basil in anything so I simply added some dry to the mix for flavor.  Worked out great!

Spaghetti A Different Way

Hello All and Happy Thursday!  Prayers to those that need them.  Super easy recipe here today, just use the usual spaghetti and sauce that your family loves and enjoy!!!  Weekend is right around the corner, hope you enjoy!!

Spaghetti A Different Way

6 ounces spaghetti
1 1/2 tablespoons olive oil
cooking spray
1 1/2 cups grated Parmesan cheese, divided
1 1/2 cups tomato-based pasta sauce
12 (1 ounce) cooked 
meatballs
Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 7 minutes. Drain and toss in a bowl with olive oil; refrigerate until cooled, about 15 minutes.
Preheat oven to 375 degrees F (190 degrees C). Spray 12 muffin cups with cooking spray.
Toss cooled spaghetti with 1 cup Parmesan cheese. Divide spaghetti between the 12 prepared muffin cups, arranging noodles in each cup to create “nests” for the meatballs.
Top each “nest” with 1 tablespoon pasta sauce, 1 meatball, and 1 more tablespoon pasta sauce, respectively. Sprinkle remaining Parmesan cheese over the tops of each meatball “nest.”
Bake in the preheated oven until pasta and meatballs are heated through and cheese melts, 20 to 25 minutes. Cool slightly before transferring muffin bites to a serving platter.

Barbecue Chicken Bubble-Up Bake

Hello All!  Hope things are good.  Prayers for those that need them.  Keep your chins up, the weekend is around the corner lol.  Today's recipe (I don't think I have blogged it, but you never know) comes from Pillsbury, I made it last week and even the four year old scarfed lol. Oh and to make it even easier I used shredded rotisserie chicken.  Makes it a keeper in my house.  Hoping for the same for all of you.  See you Thursday!

Barbecue Chicken Bubble-Up Bake

1 lb boneless skinless chicken breasts, cut into 1" pieces
1 16.3 oz can Pillsbury Grands Homestyle refrigerated original or buttermilk biscuits
1 18 oz bottle of your favorite barbecue sauce
2 cups shredded mozzarella cheese (8oz)
3 Tablespoons chopped fresh cilantro, if desired (I left it out, my family aren't fans)

Heat oven to 350°.  Spray 13 x 9" (3-quart) glass baking dish with cooking spray.

Heat 10" nonstick skillet over medium-high heat.  Add chicken;  cook 10 minutes, stirring occasionally, until no longer pink in center.  Remove from heat.  Cool slightly, about 5 minutes

Meanwhile, separate dough into 8 biscuits.  Cut each biscuit into 8 pieces.  Set aside.

Place cooked chicken in medium bowl.  Pour barbecue sauce over chicken; stir to combine.  Add biscuit dough pieces to chicken mixture; gently toss to combine.  Spread mixture evenly in baking dish.  Sprinkle cheese over top.

Bake 25-30 minutes or until golden brown and cheese is melted.  Sprinkle cilantro over top.  Serve immediately.

Red Velvet Cookie Bars

Hello All and Happy Tuesday!  Hope everyone is doing well, prayers to those that need them.  It's a rainy one here today, I'm ok with that.  It has had me moving slower than usual but I'm getting around to my adulting LOL!!  So today my friends I'm feeling dessert.  A Pillsbury classic, another of their so simple yet delicious recipes.  Hope you enjoy!  Look forward to chatting on Thursday!

Red Velvet Cookie Bars

1 roll Pillsbury refrigerated chocolate chip cookies
1 box red velvet cake mix 2/3 cup melted unsalted butter 
2 eggs, room temperature
Powdered sugar, if desired

Heat ove to 350°F.  Spray 8" square pan with baking spray with flour.

With lightly floured fingers, break up cookie dough into pan; press evenly in bottom of pan to form crust.

Bake 15 minutes.  Remove pan from oven; cool 10 minutes.  Meanwhile, in medium bowl, beat cake mix, melted butter and eggs with whisk until well combined.

Spread cake batter evenly over partially baked crust.  Return to oven; bake 25 to 30 minutes or until toothpick inserted in center comes out clean.  Cool completely, about 30 minutes.

Cut cooled bars into 4 rows by 3 rows; sprinkle with powdered sugar.

(**I actually didn't cook the cookie crust as long the first phase because it cooks in the second phase and I was afraid it would become too hard and taste burnt.)

Meatball Sub on a Stick

Happy Thursday residents!  Prayers to those that need them and love to us all! Speaking of love.....FOOTBALL is almost back!  Time to start building this years favorite finger foods.  I ran across this last week and they were exactly what I expected them to be.  Simple, easy and tasty.  So this will not only make all the football fans happy but also the kids at your Asylum!  Make sure to try them out this weekend!  See you next week.  Enjoy!!

Ingredients:
1 bag Farm Rich Meatballs (Original, Turkey or Italian)
1 tube breadstick dough
2 tbsp. Italian seasoning
1 cup Mozzarella cheese
1 cup marinara sauce
12 bamboo skewers (like the ones you use for caramel apples)

Directions:
NOTE: The meatballs come frozen so you'll need to defrost them in the refrigerator overnight or in the microwave before making this. You want them soft enough to be able to insert onto the skewers. For one tube of breadsticks, you'll need 36 meatballs.

Preheat oven to 375F.
Line 2 baking sheets with parchment paper.

Unroll dough and separate into 12 breadsticks. Thread one end of a breadstick on a skewer; add one meatball then thread the dough around the meatball. Repeat threading with breadstick and 2 additional meatballs.

Place about one inch apart on cookie sheet. Repeat with remaining breadsticks and meatballs.

Bake for about 20 minutes. Meatballs should be cooked through and the breadsticks a nice light, golden brown. You may need to rotate the trays halfway through to ensure even cooking.

Once finished, take out pans and sprinkle the meatballs with mozzarella cheese and top that off with a sprinkle of Italian seasoning.
Put the meatballs back into the oven for another 3-4 minutes or until cheese has melted.

Gently heat up some of your favorite marinara sauce and serve with the meatball skewers for dipping!

Crock Pot Chicken and Gravy

Hello All and Happy Tuesday!  Prayers to those that need them!  Hope Monday didn't take too much out of you.  Sure glad you stopped by.  Today's recipe is super simple, super yummy and comfort food.  Nothing missing.  I wanted to check it out last week to prep for winter meals coming up and this will make the rounds.  I found it while checking on my Pinterest account, it originated at thecountrycook.net. Crock Pot Chicken and Gravy


2 packets dry chicken gravy mix
1 10.75 oz can cream of chicken soup
2 Cups water
1 lb boneless, skinless chicken breasts
garlic powder, salt & pepper, to taste
1/2 Cup sour cream (optional) (I used Greek yogurt)

Serve over 

Season chicken breasts with garlic powder, pepper and minimal salt. (The soup and gravy mix are high in sodium)

In slow cooker mix gravy mix, chicken soup and water.  Whisk until completely mixed.
Add the chicken breasts, cover with gravy.  

Cover and cook low 6-8 hours.  Shred chicken then serve over rice, mashed potatoes or noodles.  Last week we had mashed potatoes. :)

Patty Melts with Secret Sauce

Happy Thursday!  Prayers to those that need them!  Thank you again for stopping by.  Well, OMG!  Of course, I go and start a diet and then stumble across this beauty!!  There is just going to have to be a cheat day somewhere in my near future!  Please, take this, use it, abuse it and tell us just how *#&@!! good it was when you did!  :) Maybe I will get lucky and Spicy will take a run at it for her Asylum and let us know how it turned out!  There is no doubt in my mind that it will be nothing less than food porn!!! :)


Patty Melts With Secret Sauce

1½ pounds ground beef
2 teaspoons Worcestershire sauce
1 teaspoon kosher salt
½ teaspoon ground black pepper
12 slices sourdough bread
½ cup Secret Sauce
3 medium Vidalia onions, thinly sliced
6 slices Cheddar cheese
8 tablespoons unsalted butter

Secret Sauce
¼ cup Dijon mustard
¼ cup mayonnaise
1 tablespoon barbecue sauce
½ teaspoon hot sauce
In a small bowl, stir together mustard, mayonnaise, barbecue sauce, and hot sauce. Store, covered, in refrigerator up to 3 days.

In a large bowl, combine ground beef, Worcestershire, salt, and pepper. Shape ground beef into 6 oval patties.
In a medium cast-iron skillet, melt 2 tablespoons butter over medium heat. Add onion. Cook, stirring occasionally, until onion is soft and golden brown, approximately 35 minutes.
In a large cast-iron skillet, cook patties over medium-high heat until browned and cooked through, approximately 2 minutes per side. Remove skillet from heat. Remove patties from skillet; wipe out skillet.
Layer 1 bread slice with 1 tablespoon Secret Sauce, 2 to 3 tablespoons caramelized onions, 1 slice cheese, 1 patty, and another 1 tablespoon Secret Sauce. Top with another bread slice. Repeat with remaining bread, Secret Sauce, caramelized onions, cheese, and patties.
Heat skillet over medium-high heat. Melt 2 tablespoons butter in skillet. Working in batches, cook sandwiches, flipping once, until golden brown and heated through, approximately 3 minutes per side. Add remaining butter to skillet as needed.

Easy Zucchini Fritters

Happy Tuesday Friends!  I hope you all enjoyed your patriotic holiday.  Thank you to those of you who serve or have a member serving in your family, thank you to you all.  Dad picked his first harvest from his garden today, brought in three beautiful zucchini.  I asked how he would like me to cook it and he said I don't care, experiment we will have plenty!  LOL.  Worked for me.  I got on my tablet and was in the kitchen cooking within minutes. :)   Prayers to those that need them.  Thank you so much for stopping by.  Today's recipe was found at allrecipes.com.  Please enjoy like we did!  Mmmmm summer harvest, the best!  See you Thursday!

Easy Zucchini Fritters


1 1/2 pounds of zucchini, grated
1 large egg, beaten
1 teaspoon of salt
2 cloves of garlic, minced
1/4 cup all-purpose flour
kosher salt and ground black pepper, to taste
1/4 cup grated parmesan cheese
1 Tablespoons of olive oil

Directions

  1. Toss zucchini and salt together in a large colander and place in sink to drain for 10 minutes.
  2. Put zucchini in the middle of a piece of cheesecloth; wrap cheesecloth around zucchini and squeeze to drain as much moisture from zucchini as possible.
  3. Mix flour, Parmesan cheese, egg, garlic, kosher salt, and pepper together in a large bowl.  Add zucchini and mix well.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Scoop batter by the tablespoon into the hot skillet and fry until golden brown, about 2 minutes per side.

Easy Asian Chicken Slaw

Hey Crazies!  Another Tuesday is upon us!  We are truly blessed.  Now, let's just pray we can get through to the weekend lol.  Just a quick note today!  Thank you all for visiting.  It is salad time of the year, hit 80 today, ugh.  So here is the latest.  I made the batch of it to have servings for lunch through out the week.  Tastes great!  Residents are happy once again.  I hope the same for you.  See you Thursday!

Easy Asian Chicken Slaw
1 3 oz package ramen noodles
1 rotisserie chicken, skin removed, shredded
1 16 oz package coleslaw mix
6 green onions, finely chopped
1 cup reduced fat Asian toasted sesame salad dressing

Discard the seasoning packet from noodles or save for another use.  Break noodles into small pieces; place in a large bowl.  Add chicken, coleslaw mix and green onions.  Drizzle with salad dressing; toss to coat.

Easy Banana Cream Pudding Pie with Cream Cheese Crust

Good Morning!  Oh man it is Saturday and almost April!  Wow, where does the time go?  I must ask that same question like twice a month at least lol.  Ok, enough talk.  Today's recipe is long, but OMG it is so worth all the time!  Do it!  I promise, your friends and family will thank you multiple times.  This delicious recipe is brought to you by Averie Cooks.  And I say thank you, thank you, thank you.!  LOL  Have a great weekend, it will be better when you make this pie!

Easy Banana Cream Pudding Pie
with Cream Cheese Crust

Crust:
1/2 cup Crisco Baking stick
4 ounces (1/2 cup) block of cream cheese, softened (do not use lite or fat free)
1 1/2 cups all-purpose flour
1/4 teaspoon salt

Filling:
one 5.1 oz box INSTANT vanilla pudding mix
1 1/2 cups cold milk
one 8 oz tub Cool Whip or similar whipped topping, thawed to room temp, divided
2 medium/large bananas, sliced into thin rounds
1 to 2 tablespoons lemon juice
about 2 1/2 to 3 cups coarsely chopped Nilla Wafers, divided (most of an 11 oz box)(I used Mini Nilla Wafers)
caramel or salted caramel sauce for drizzling

Directions:

Crust - Preheat oven to 400° and spray a 9 or 10 inch pie dish with cooking spray; set aside.

To the bowl of a stand mixer fitted with the paddle attachment add the shortening, cream cheese and beat on medium-high speed until fluffy, about 1 to 2 minutes.

Stop, scrape down the sides of the bowl, and add the flour, salt and beat on low speed until a sandy, crumbly dough forms.

Turn crumbly mixture out into prepared pie dish and using your fingertips, hard pack the mixture to form an even, smooth crust making sure to press mixture up around sides of pie dish.

Pierce crust in about a dozen places with a fork so steam can escape while baking.

Bake for about 15 minutes or until set and lightly golden brown.  Watch crust closely in final moments of baking as it will be prone to burning around the top edge.  Set aside on a wire rack to cool while you make the filling.

Filling - To a large bowl, add the pudding mix, milk and whisk to combine.

Add half the whipped topping and whisk to incorporate.

Slice the bananas, add to a medium bowl, drizzle with lemon juice, and use your fingers to gently toss to disperse the lemon juice which helps to prevent the bananas from turning brown.

Add the bananas to the pudding mixture and fold gently to combine.

Add about 1 1/2 heaping cups Nilla wafers and fold to combine.

Turn mixture out into pie crust.

Add and gently spread remaining half of the whipped topping.

Sprinkle remaining Nilla wafers, cover with plastic wrap, and refrigerate for at least 4 hours, or until set.

Prior to serving, drizzle with caramel sauce to taste.  Pie will keep airtight in the fridge for up to 5 days, noting that as time passes the Nilla wafers will soften and bananas could turn a bit brown.

Skinny Fried Egg and Avocado Toast

Hello everybody and Happy New Year!  I am hoping it brings amazing things to all of you!  As most of us do, I have started (again) on the journey of weight loss.  I made this for breakfast and it was great!  Was able to really enjoy breakfast and not feel bad about it!  I hope it does the same for you.  Really, what is it with me and my breakfasts?!  LOL  Well, enjoy everybody!  See you on Thursday!
Skinny Fried Egg and Avocado Toast

Ingredients
  • 2 eggs
  • 2 slices ciabatta bread, toasted
  • ½ avocado
  • Salt, pepper and parsley for toppings
  • 1 teaspoon lime juice
  • Non stick spray
  • Optional toppings: salsa, tomatoes, purple onions, parmesan cheese
Instructions
  1. Toast ciabatta bread
  2. Fry eggs in a small skillet over med-high heat with a little non-stick spray (or coconut oil works too!) then top with salt and pepper for taste
  3. Peel avocado and smash it up with the lime juice, salt and pepper
  4. When toast is done, spread avocado evenly on both slices
  5. Top it with the fried eggs and add additional toppings if you so desire

Time for pumpkin

Hello all!  Happy Thursday.  So you know life is just crazy, yeah well I keep waiting for it not to be.  Long wait ahead of me huh?  Mom is changing the types of foods she likes, you know the stuff she loved she no longer eats.  Hard to keep up with so I'm trying new things.  Like I told you before also, the softer the better.  I stumbled across the recipe on facebook today and thought no way lol.  Could it really be that easy?  And let me tell you emphatically yes, it can be that easy!  LOL.  The recipe came from www.skinnycinderelly.com and a lady by the name of Gail Blaney!  Hats off to her, because they sure have worked great with my momma!  Kids especially I think will really enjoy them.  Another excellent point of fact is that they are simple and can be taken to many other levels.  Depending on just what kind of mood you are in.  I personally didn't want a lot of extra ingredients (hard for the momma) so I went straight up!  Mom is anxious to have another for breakfast in the morning!  :)

Pumpkin Muffins

Only 2 ingredients! A boxed yellow cake mix and a 15oz can of pure pumpkin.

Just the cake mix and the pumpkin!

No oil, no eggs, no water, no nothing!

Bake at 350° for 20-25 minutes (mine were perfect on 20 minutes, mom has a gas stove and it runs hot!) 

I made a change here (due to some comments I read and happily took their advice) and used the Spice cake for more flavor than just the yellow cake.  To each their own, heck even chocolate cake might be good.  Hmmmmmmmmm, for another day!

Happy Saturday All!

Hope everyone had a wonderful week.  If you are anywhere in Virginia you know that the weather is amazing!  Lovin' it!  Oh yeah, back to what I was doing.  So today is a recipe some may want to wait for the winter to use, mostly because it will cause you to turn on the oven.  Others, where it's nice weather or just have great a/c won't mind so much lol!  Today I'm going for a side dish.  Have used it many times, love the way the vegetables turn out.  And trust me when I tell you it's an easy one, always makes it a favorite.  I found the recipe in a Clean Eating magazine Jan/Feb 2009.  They are called LeAnn's Baked Vegetables.  I didn't keep the whole magazine and I'm not sure who LeAnn is, but I'm thinking I remember the article and it was about LeAnn Rhymes.  I'm not sure so don't hold me to that.  I did go to the Clean Eating Magazine and try to find out for sure but wasn't able to find much from that far back.  Anyway LeAnn did a great job on these veggies, enjoy them as we did!  Have a great weekend.

LeAnn's Baked Vegetables

8-10 Brussels sprouts, halved
12-14 baby carrots, cut into small pieces
2 potatoes, diced
1/2 white onion, chopped (I used vidalia but I use them in everything!)
2-3 Tablespoons extra virgin olive oil
Sea salt and pepper, to taste
Olive Oil cooking spray

     Preheat oven to 350°.  In a large bowl combine Brussels sprouts, baby carrots, potatoes and onions.  Drizzle with Olive Oil.  Then mix in sea salt and pepper.

     Lightly mist an 8x8 cooking pan with cooking spray and spread mixture onto pan.  Bake for 20-40 minutes or until the vegetables are crispy on the outside and soft on the inside.

Saturday or Sunday morning breakfast!

So yeah I know, I'm making breakfast again, what can I say lol.  Today's recipe was found at www.twopeasandtheirpod.com.  They have some really great ideas and some awesome food.  This one I used as just a base line for myself this morning.  I had bulk sausage instead of links, not eating cheese but mom and dad did so I was able to sprinkle it on top of just theirs and I used more whole eggs than egg whites.  LOL.  That being said, the finished product was absolutely delicious!  And super easy.  I hear you can freeze these things, but if nothing else they are great to have in the fridge because of being so easy to grab and microwave!  Simple making, easy clean up, super tasty and convenient for the rest of the week.  What's not to love?  Yeesh, you would have to be crazy not to love them. Oh wait, we are crazy!  Ok so your taste buds must be broken if you don't like them lol.  I also added onions and green peppers diced very small into the sausage as it was cooking. So use this recipe as a guideline and make them any way you and your crazies like 'em!  It's also a great way to get veggies in at breakfast which isn't always easy to do!  Hope your asylum is running smoothly today!  Glad to be back.  Be sure to let us know what you think or if we can help you out with anything!  Have a great weekend and an even better week ahead!



Egg Muffins with Sausage, Spinach, and Cheese

Yield: Serves 6Prep Time: 10 minutesCook Time: 20 minutesTotal Time: 30 minutes

Mini frittatas made in muffin tins, with eggs, turkey sausage, spinach, and cheddar cheese. You can reheat these egg muffins in the microwave. A great breakfast on the go! (I did put a sheet pan under my muffin pan as I over filled a couple and knew they were going to spill into the over!)

Ingredients:
3 lean breakfast turkey sausage links
5 egg whites
2 whole eggs
1/4 cup skim milk

Salt and pepper, to taste
1/4 cup fresh chopped spinach
1/4 cup shredded sharp Cheddar cheese

Directions:
1. Preheat the oven to 350 degrees F. In a medium skillet, brown the turkey sausage links on medium-high heat. Cook until sausage is brown all the way through. Cut sausage into 1/2 inch pieces. Set aside.

2. In a large mixing bowl, whisk together egg whites and eggs. Whisk in skim milk and season with salt and pepper, to taste. Stir in the chopped spinach.

3. Grease 6 muffin tin cups with cooking spray or line cups with paper liners. Pour egg mixture evenly into the muffin cups.

4. Distribute cheese and sausage equally between each muffin cup.

5. Bake egg muffins for 20 minutes, or until the muffins are firm in the center. Remove from oven and gently go round each egg with a butter knife. Serve warm.

Note-you can store the egg muffins in the fridge for 3-4 days and reheat them in the microwave.

Quiet Saturday

Hello all!  Quiet day at my Asylum today.  I like it that way.   I hope everyone had a wonderful week and will enjoy an even more wonderful weekend!  Love your families and enjoy your time! :D  I got my recipe for today when I lived in Ohio from a friend named Erma, she was doing weight watchers at the time.  And this has been at least 15 years ago.  So Weight Watchers is the only thing I know about it, except for the fact that is definitely delicious and super easy.  Enjoy!

Mexican "Quiche"

4 6" flour tortillas
1/4 lb crumbled sausage
1/2 cup red bell pepper
1/2 cup diced red onion
1 small garlic clove, minced
1 tablespoon lemon juice
1/2 teaspoon ground cumin
3 eggs, lightly beaten 
2 oz shredded cheddar cheese (or taco mix cheese)

1.  Preheat oven to 375°.  In a 9" pie plate arrange tortillas in a single layer over bottom and up sides of plate to form a crust.  Bake until browned, 5-6 minutes; set aside.

2.  Cook sausage, bell pepper, onion and garlic over medium heat, stirring occasionally until sausage is no longer pink.  Remove from heat, stir in lemon juice and cumin.  Add eggs and stir to combine.

3.  Sprinkle 1 ounce cheese over prepared tortilla crust; spread sausage mixture over cheese, then top with remaining 1 oz of cheese.  Bake for 20 minutes, until cheese is melted and sausage mixture is set.

And of course salad on the side is excellent!

Apparently Spicy felt that all of your cook coats (aka straight jackets) were looking a little dingy LOL.  I guess she doesn't get enough laundry at home.  Boy I sure do, it's another one of those chores that I would pawn off on anyone I could.  Honestly, I can say hubs helps me with my least favorite part..........LOL......He matches up all the socks and I do the rest.!  And while I am enjoying time with family, it's not all fun and games like the Spicy German makes it sound.  But tough though it may be, any family time is good family time! :D.

Today I'm going simple again.  This recipe comes from our friends at EatBetterAmerica.com.  It's for Carmelized Garlic Chicken which can work in so many ways in so many places.  I have made this before and shredded it for salad, kept it whole along with mashed potatoes and baked asparagus, diced it up for stir fry and cubed/shredded it for chicken salad!  Now that's a lot of stuff from a little ole chicken breast!  LOL! Bwhahahahahaha.  Don't ask!

So whatever you decide to use this chicken for I am sure it will work out great.  Happy Thursday everybody!  Hope your fresh straight jackets fit well!  The ride just keeps gettin' better! :D!!

Carmelized Garlic Chicken

4 cloves of garlic, finely chopped
2 teaspoons olive oil
4 teaspoons packed brown sugar
4 boneless skinless chicken breasts

1.  Heat oven to 425 °.  Line shallow baking pan with foil; spray foil with cooking spray.

2.  In 8" nonstick skillet cook garlic in oil over med-low heat 3-4 minutes, stirring occasionally until garlic begins to soften. Be sure to keep an eye on it because burned garlic is yuck garlic.  Remove from heat.  Stir in brown sugar until well mixed. 

3.  Place chicken in pan.  Spread garlic mixture evenly over chicken.

4.  Bake 20-25 minutes

Easy and Delish!

Good morning all!  Well, I'm road tripping so easy but good is on my mind!  The Spicy German, just having had company is also in need of and a fan of easy and good!  I hope things are great for everyone on this beautiful Tuesday morning!

This meal is so easy, I was almost ashamed of making it the first time LOL.  You know people expect a certain level of cooking and well this was too easy to be so good.  But the family ate it up and I was able to keep moving and have minimal clean up!

Sorry I'm short today, but had to visit in my busy schedule! I have a whole weeks pass from the Asylum so I'm stoked! Freedom!! We love you guys and thank you so much for visiting! :D

Easy Ham Chowder

Prep time:  5 minutes
Cook time:  5 minutes
4-6 Servings

1.5 Cups diced cooked ham
1 can (10.75 oz) condensed cream of mushroom soup
1 can (14.5 oz) Del Monte Whole New Potatoes, drained and diced
1 can (8.25 oz) Del Monte Sliced Carrots, drained
1 can (8 oz) Del Monte Cut Green Beans, drained

(Of course any brand of these items would be fine!  You can tell the recipe came from Del Monte!  LOL)

1.  Combine all ingredients in medium saucepan.

2.  Stir in 1.5 cups water or milk.  (Milk makes it creamier!)

3.  Bring to a boil; reduce heat and simmer 3 to 4 minutes or until heated through.  

Serve with warm biscuits, bread or crackers! Yummmmmmmmmmmm! Enjoy!

P.S.  Doubling works well also!
