Ambrosia

I don't know if this is actually ambrosia, but that's what we've always called it!
My Teenager talked about the fruit salad at school all week and how they kept adding or changing it up. They even added cinnamon on Friday. He was pretty impressed with it.

We were having company for supper Sunday, so I thought I'd make it for him. I like to make it up the day before or even early morning before so it tastes even better. As I was making it he asked what it was. I told him his fruit salad, he said this wasn't it. I had him taste it and he went all Lord of the Ambrosia and tried to "My Precious" it out of the kitchen!

Ambrosia
Can of fruit cocktail (drained)
Can of tropical fruit cocktail (drained)
Can of pineapple tidbits  (drained)
Can of Mandrian oranges (drained)
1 large tup of cool whip (thawed)
1/2 tsp Cinnamon (opt)
1/4 tsp nutmeg (opt)

Throw it all in a container and mix gently. Your done! Enjoy!

Cottage Cheese Salad

Well hello everybody!  Hope this finds you braving your way through Thanksgiving week!  I was at the store today to get the last of my ingredients (hopefully) and it was packed.  And so the holidays have arrived.  My recipe may be a repeat but I have decided that even if it is I'm good with that.  That is how much we enjoy this stuff.  Lots of people are fans of the waldorf salads, personally I'm not a fan.  This recipe is probably the closest you can get to that type of salad though.  The recipe is called Cottage Cheese Salad.  Our residents lovingly refer to it as green stuff.  The green comes from the lime jello that is used.  This year my beautiful granddaughter asked me if we could have pink stuff.  But of course!  To make this happen I chose the raspberry flavored jello.  Beautiful color if I say so myself! :D.  And the tradition continues!

Oh, and I have absolutely no idea where this recipe came from, except from my mom.  LOL.  I'm sure she didn't create it but unfortunately in her condition we will never know exactly where it came from.  Enjoy!

Cottage Cheese Salad
AKA  Green Stuff

1 small box of lime jello
12 oz small curd cottage cheese
1/2 cup pecans
16 oz crushed pineapple, drained
1/2 cup coconut
1/2 cup maraschino cherries, quartered
Large tub of Cool Whip


Mix jello and cottage cheese till totally blended.  Then add pineapple, pecans, coconut and cherries, mix.  Fold in Cool Whip.  Being cold is important and it also does well with time.

Well, we always gotta eat.....

Ok, so life......................rough.  But we all gotta eat.  This recipe is from my mom.  It's one of the family favorites.  Mostly made during the holidays but we had it this weekend so we could reminisce.  We all really enjoyed it as always.  I hope your family enjoys it too! Straighten out those jackets, trust me crazy is on the loose! Oh and FYI I have no earthly idea where this recipe came from.  I am 98% positive mom found it somewhere and has passed it down to us, but not created it.  We lovingly refer to it as Green Stuff.

Cottage Cheese Salad

Large tub of Cool Whip
1 small box lime jello
12 oz small curd cottage cheese
1/2 cup coconut
1/2 cup pecans, chopped
1/2 cup marachino cherries, quartered
16 oz crushed pineapple, drained

Mix jello and cottage cheese till well combined.  Then add the pecans, coconut, pineapple and cherries; mix well.  Fold in whipped cream until completely mixed.  Refrigerate at least an hour. (You can switch up the jello that is used, say strawberry for red stuff at christmas also)
