Sour Cream and Onion Cucumber Salad

Hello fellow residents!  Hope your Thursday is great, prayers to those that need them.  Sorry I'm late today but oh well, it happens LOL!  Anyway Dad has an abundance of cucumbers coming in from the garden and loved it growing up when his grandmother would make this kind of salad.  I wish I was able to use her recipe but alas I had to turn to the interwebs.  But, that's ok because I was able to find this gem in the kitchen of Deep South Dish.  Dad and my son loved it.  Hubby isn't a fan of cucumbers and well my stomach is not a fan of sour cream.   I might have tried if I had made it with greek yogurt but dad chose sour cream.  Hope all your residents enjoy it as well!  Have a great rest of your week and week end and I will see you back here Tuesday!

Sour Cream and Onion Cucumber Salad

4 large cucumbers
1 Tablespoon kosher salt
1 extra large vidalia onion

For the dressing:
1/3 cup white vinegar
1/3 cup granulated sugar
1 cup sour cream (or greek yogurt or even mayo)
1/4 teaspoon fresh cracked pepper or to taste
2 teaspoons fresh chopped dill (1/4 teaspoon dried) optional

Peel cucumber and slice thick.  Add to a colander placed on a rimmed dish (I sat the colander in the sink, not sure why they said it that way), toss with salt and let rest 30 minutes to draw out some of the water.

For the dressing, whisk together the vinegar, sugar, sour cream, pepper and dill, if using.  Halve and slice the onion into thick slices, adding to the dressing with the cucumbers.  Toss, cover tightly and store in fridge for several hours or preferably overnight, before serving, until well chilled, stirring occasionally.
