Corn dog muffins

I shared this before in a blog, but it was just a quick list of easy to make already in your bare cupboard foods.

Corn Dog Muffins

1-2 boxes corn bread mix (we like Jiffy)
1 pkg hot dogs

Mix up your corn bread with either the recipe or the mix directions. Put a small dollop of mix in the bottoms of 8-16 muffin tins that you have greased or lined with paper liners. (If you do 2 boxed you will have enough mix left over for 2 plain muffins)

Cut your hot dogs in half and place on top of that dollop and cover with remaining mix. Bake at 400 for 10-15 min until there is a light golden brown on top!

Corn bread

3/4 c yellow corn meal
1 c white flour
2 TBSP sugar
2 TBSP melted shortening
1 tsp salt
3 1/2 tsp baking powder
2 eggs
1 cup milk or sweet milk

Sift flour and corn meal; measure and add baking powder, salt and sugar. Sift again.

Add beaten eggs and melted shortening (half fat and half butter).

Beat thoroughly.
