Cheddar-Stuffed Buffalo Burgers

Hello and Happy Tuesday! Prayers to those that need them! Looks like Spicy and I both are putting together our thanksgiving meals, bet you guys are doing the same.!  It's seems to come faster every year.  But really, when we walked into Wal-Mart the day after Halloween and were ambushed by a giant Christmas tree I cringed!  Time goes quick enough, will you crazy people please slow down!  LOL  Alright, enough rant, sorry.  Time for eats!  So today I'm realizing it's November but the weather is more like September and beautiful.  Makes me think of warmer weather food, so I will put away the crock pot today and I think I'm going to make my Cheddar-Stuffed Buffalo Burgers from the Weight Watchers New Complete Cookbook.  Yep and then maybe even some potato salad on the side.  It's just that kind of b-e-a-utiful day!  I hope your worlds are quiet and right today as well, at least for a few minutes at some point!  Thanks for stopping by, see you Thursday!

Cheddar-Stuffed Buffalo Burgers

1 lb ground buffalo meat
1 small Vidalia or other sweet onion, finely chopped
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper
1/2 cup shredded reduced-fat sharp cheddar cheese
4 English muffins, split
4 romaine lettuce leaves, trimmed
4 tomato slices

In a medium bowl, combine the buffalo, onion, Worcestershire sauce, salt and pepper; mix well to combine.  Divide and shape the mixture into 4 balls.  With your finger make a deep indentation into each ball.  Fill each hole with 2 tablespoons of the cheese.  Pinch the meat closed to cover the cheese and shape each ball into a 3/4-inch-thick patty.  

Toast English muffins.  Spray a nonstick skillet with nonstick spray and heat over medium high heat.  Cook burgers 3-4 minutes per side for medium rare. (longer to your liking)

Place the English muffin bottoms on 4 plates.  Top each with 1 lettuce leaf, 1 tomato slice, and a burger.  Place the muffin tops on each burger!
