Avocado Chicken Salad

Hello Everybody and  Happy Thursday!  Prayers out to those that need them.  We hope your straight jackets are loose enough to be comfortable today :).  Summer is ending I know, but I'm not quite ready to move away from the fresh salads just yet.  This is so so tasty.  I really had to make myself behave and not eat it all.  I almost didn't share it, but I can tell the guys were really glad I did.  Give a try at your Asylum and let us know how it goes!  Finish the week off well, enjoy peaceful times in your weekend and as always be sure to tell people how you feel about them!  (I found this lovely gem on Facebook, StrongGirls page)


Avocado Chicken Salad

2-3 boneless, skinless chicken breasts
1 avocado
1/4 chopped onion
Juice of 1/2 a lime
2 Tablespoons cilantro (I only used one, it's way too strong for me)
Salt and Pepper to taste

Cook chicken breasts until done, let cool, then shred.

Mix with all other ingredients.

I think it's at its best after chilling in the fridge for at least an hour.  But that's just the way I liked it.  If you find something else that works well, let us know, we would love to hear from you.
