Hello all and happy Tuesday! Prayers to those that need them. I'm hoping the week has started out well for you. So, again, I must speak of the evil garden over load! LOL This time, tomatoes. Dad asked me about making "Chili Sauce" with them. The recipe comes from his grandmother and I have never made it alone. Actually Mom didn't even make it alone. Dad would help unless she was making a really big batch then the three of us would do the work! Anyway, I found the recipe and I conquered the recipe. I made 4X the batch, cause for all that work I wanted it to be around for a little while! LOL! If you are just making the one batch the chopping is minimal! You are probably asking yourself how this stuff would get used? We make our meatloaf with instead of ketchup or bbq sauce. It's amazing over scrambled eggs. But I think my favorite is over a plateful of beef hash (beef, onions and potatoes). Love this stuff, hope you will too! Tighten up those jackets, it's time to get busy!! See you Thursday!
Chili Sauce
1 Cup smashed tomatoes
1/2 Cup chopped celery
1/2 Cup chopped green pepper
1 chopped onion
1 Cup sugar
1/2 cup vinegar
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cinnamon
1/4 teaspoon cloves
1/3 teaspoon allspice
dash of nutmeg
Cook all ingredients together over a low boil for about one hour. If the sauce isn't as thick as you would like you can add tomato paste as needed and simmer a little longer.
