Marinated Tomatoes

Hey Guys!  Sorry to be so late.  Life just moves so fast.  Like you don't that, right?  LOL  Hope life is treating you amazingly.  Quick message today since I'm running behind.  Today's tomatoes aren't the best and this recipe breaks them down and helps to bring out their deliciousness!  Enjoy!

Marinated Tomatoes

3 Tablespoons chopped fresh parsley leaves
1 Tablespoon sugar
1 1/2 teaspoons garlic salt
1 1/2 teaspoons seasoned salt
1/2 teaspoon ground pepper
3/4 teaspoon dried thyme
3/4 cup vegetable oil
1/2 cup red wine vinegar
2 to 3 green onions, chopped
4 to 6 large tomatoes, each cut into 6 wedges (I have used smaller, just cut less)

Combine all ingredients, except tomatoes, in a large measuring cup or mixing bowl.   Whisk well.  Place tomatoes in a resealable plastic bag and pour marinade over.  Marinate at room temperature for up to 2 hours, turning the bag occasionally.

Spicy German Skillet!

Well I woke up with a worse cough than yesterday so I will get you a recipe (or three;) today. Then I will put my kids on a bus and head back to bed! I love how nighttime meds help you sleep, but you wake up feeling hung-over on top of being sick! Ok rant over!
Todays recipe came from Facebook land. One of my friends posted it. When I shared it there, another friend said she did something similar and gave me permission to share it with you!
Below is 2 recipes in one, theirs and the changes I made in parentheses.
German Skillet Dinner
AKA Spicy German Skillet Dinner ;)
3 TBSP butter
1/2 cabbage, chopped
1 medium onion chopped
2/3 cup minute rice. (1 cup)
2 lbs hamburger (1lb Italian sausage and 1 lb HOT Italian sausage)
1 can diced tomatoes (1-2 fresh tomatoes sliced, because I didn't have canned)
Salt and pepper to taste
In a large skillet melt the butter and layer ingredients in the order above. Put on the lid and simmer for 25 minutes or until burger is cooked and onions are transparent.
Here is my friend's version of the recipe.
She said she doesnt really have a detailed recipe, so I know she is awesome! Best recipes and things our kids will eat come from us creating in our kitchens!
About 2 lbs hamb. 
Bag of coleslaw mix,
1/2 c rice
can of tomato soup...
I add water if it looks dry. 
Browned meat separate.
The one thing I would do different in my recipe is weekday she did in hers. I would brown my meat separate. I stressed to much over it not being cooked properly!

IT IS FRIDAY!!!

Commence Happy Dance now!  I am so excited to be going into the weekend.  We have all been sick here at the Asylum and are ready for a weekend of fun with our family!


So because we are busy here at the Asylum Saucy and I will be taking the weekend off (Saturday-Monday) to enjoy spending time with our families!


Today's recipe is from one of my Food Network magazines.


Classic Red Sauce
1 28 oz can whole peeled tomatoes
2 TBSP extra-virgin olive oil
1/3 red onion
3 cloves garlic, cut into chunks
Pinch of red pepper flakes (optional)
Kosher salt and freshly ground pepper
2 TBSP torn fresh basil
1 lb penne or spaghetti, cooked until al dente


Puree the tomatoes to a smooth, creamy consistency in a food processor or with an immersion blender.  Heat the olive oil over medium-high heat in a large saucepan.  When hot add the onion and sautĂ© 5-6 minutes, until you see the color start changing.  If you'd like to make the sauce spice, add the red pepper flakes.  Add the tomatoes and season with salt and pepper to taste.  Reduce the heat to medium low and simmer about 30 minutes.  Strive for balance in the consistency of the sauce: It has to be fluid, but should not look overly wet.  Add the basil and remove from the heat.  Toss with just cooked pasta.

Fried Green Tomatoes

My PaPa Ted used to make me fried green tomatoes and at the time I hated them, but it was time I got to spend with him.  So, I gobbled those tomatoes up like they chocolate chip cookies!


So today I am going to share two recipes with you.  The first is from the Mennonite cookbook, which I am sure is the recipe he used and another more "modern" version that had he used I would have loved eating them!  And now I am hungry for them...


Fried Tomatoes
Mennonite Community Cookbook


4 medium-sized tomatoes
1/2 cup flour
1/2 tsp salt
3 TBSP fat (Crisco, real butter, oil)
1/8 tsp pepper
2 TBSP brown sugar
1 cup cream


Use green tomatoes or ripe but firm red tomatoes.  Do not remove skins.  Cut in slices 1/3 inch thick.  Roll in flour and fry in hot fat.  When browned on both sides, sprinkle with salt, pepper and brown sugar.  Place on platter and serve.


Fried Green Tomatoes
Black Inn Café


6 c canola oil, for frying
1 c all purpose flour
2 c milk
kosher salt
freshly ground black pepper
pinch paprika
pinch cayenne pepper
2 medium green tomatoes
2 c panko or bread crumbs


In a large, deep, heavy pan heat the oil to 350 degrees.  In a medium bowl whisk the flour and the milk together.  Mix in the salt, pepper, paprika and cayenne pepper.  Slice the tomatoes into 1/2 inch slices.  Dip the tomato slices into the batter making sure they are coated thoroughly.  Cover both sides with bread crumbs. Carefully add to the hot oil and fry in the oil until golden brown, about 3-5 minutes.  Serve immediately.

Thursday and I made it!

Hello my friends!  I hope this finds you all well and loving life!  Being summer time, tomatoes are bountiful.  And a norm for those with gardens so I figured this might be something different.  I really enjoyed these tomatoes and I'm not a big fan.  I like them don't get me wrong, but they aren't one of my go to's lol!  I will go to them every time we make like this!  Hope you enjoy :)

Monday? Again?

We had a very long weekend. It included four men trying to break into our home and 3 new patio doors to make us even safer from it happening again! Needless to say not much sleep has happened for the hubs and I!

Comfort meals are good at a time like this, so I am going to share some of my mom's recipes.

Mac n cheese casseroles!

The first recipe is for bacon lovers!

CTB (Cheese, tomato, bacon)
2 boxes Mac n Cheese
Or make yours from scratch!
Bacon or bacon pieces you find at the grocery store (NOT the bits, real bacon)
Canned diced tomatoes or freshly diced tomatoes

Make your Mac n Cheese according to the package. Add the crumbled bacon and tomatoes. Place in oven at 350 just long enough to warm through. You could also do this on your stovetop! Enjoy!

Tuna Mac n Cheese
2 boxes Mac n Cheese
1 can peas, drained
1-2 cans tuna, drained (depends on how much you want!

Make your Mac n Cheese according to the directions and add the peas and tuna. Enjoy it! If it seems too dry add a little extra milk!

Mac n Dogs
Don't forget the old stand by of hot dogs cut up in your Mac n Cheese! Who says it's just for kids and college students?

These are great summer meals for kids being home too!
