Brown Sugar and Garlic Chicken

Hello crazies!!! We need a favor from all of you. It's slightly insane, but that's what we do here. We need you to spread the word about the Asylum Kitchen. Either share with a friend, share a link on Facebook, Twitter, where ever you go. We could use some more views and more insane friends!

Today's recipe comes from the Modern Wonder Woman.  Make sure you check her page out!

Brown Sugar and Garlic Chicken
10 cloves of garlic minced

1/4 cup of olive oil

1/4 cup to 1/2 cup of brown sugar

8 boneless skinless chicken breasts

Saute the garlic in the olive until golden, add the brown sugar until it is a slight paste over medium heat.  Remove from heat and spread over chicken breasts placed in a greased glass pan.  Season with salt and pepper. Cook at 500 degrees for 30 minutes

Brown sugar bacon wrapped crackers

So Saucy and I are both excited about football season starting up (her more than me). We may not agree on our teams, but we both agree that appetizers and good food are a must for watching football. I found this recipe and I'm thinking this needs to be added to the list of football foods!

Brown Sugar Bacon Wrapped Crackers
Ingredients
1 sleeve Town House crackers (about 24)
8 slices thin bacon, cut in thirds
3-4 Tbsp brown sugar
Instructions
Preheat oven to 250°.
Line a rimmed baking sheet with foil and place a cooling rack on top.
Wrap each cracker in a piece of bacon and place it on the rack. The bacon will not fit all the way around. Just wrap it to the back. Sprinkle with brown sugar.
Bake for 1½ to 2 hours or until bacon is crispy.
pound of bacon did 2 sleeves of crackers. These go fast, so I suggest making more than one batch.

Food Hacks

Today I was looking at the bananas in the freezer and remembered my mom putting a bunch straight in the freezer no peeling it at all.  That got me to thinking about things my mom and grandparents did.  So, I thought I would share some of those tips. I am sure I have shared tips with you before so there might be a repeat or two!

Bananas- they can be put in the fridge unpeeled, but I find it easier to peel them and store in a Ziploc baggie.  We use them for everything from smoothies to bread.  Also, if you use the stem as a handle and peel from the bottom, you will get less strings.

Sugars- if you have brown sugar and it is clumping or hardening, throw in a marshmallow!  Throw a saltine cracker in with your white sugar and it helps with clumping and moisture.

Cookies- to keep your cookies soft store them in a sealed container with a piece of bread.

Bread/muffins-if you make homemade bread and muffins, store them in the fridge they will last longer and not mold as quickly.

Vegetables- after you have washed and drained your vegetable, if you are cutting it into serving pieces store it in a sealed container or Ziploc baggie with paper towels.  Don't forget to change the paper towels if they are wet.

Lemons- squeeze lemons with tongs to get as much of the juice out as you can.

I hope some of those help!  Sorry I am late today, our internet is spotty as the tower was hit by lightening and they are still trying to fix it.  I'm going to truly go insane if I don't get internet soon!

Monday, again?

Yep, it's Monday and I just heard thunder-again! Today's recipe is going to be like most of our summer recipes.  Short and sweet! Because who has time between fishing, motorcycle rides, family time and mowing two acres every week?

I think the fishing one is on the list for today if we can avoid the rain! We did the motorcycle ride yesterday.  I love summer but at the same time I am hoping for a job interview this month!  Wish me luck!

On to the recipe and enough about my crazy summer!

Peach topping
5 Peaches cut (the mushier the better)
1/2-1 cup Brown sugar

That's it! Now you have two ways to make it! Place some of the peaches in aluminum foil and sprinkle the brown sugar over them. Wrap tightly and throw on the grill while your steak/burger is cooking!

The other way is in a saucepan on the stove. Combine ingredients (there were so many) and put on simmer, stirring occasionally (don't let your sugar burn).  Let it cook down and make sure all the peaches are softened and the brown sugar has dissolved.

This can be used on ice cream, in oatmeal or just as it is!
