Hello All and Happy Tuesday! Prayers to those that need them. Thanx a lot for stopping by. Today I've got a versatile one for you. Meatballs, ok, how many different ways can you use them? LOTS! I used them in Roasted Garlic Parmesan Sauce with angel hair pasta and garlic bread to round it off. At the end of the meal though with bread left..........somehow some meatballs made it in there and I'll tell you.............best slider ever! Lol! So these beautiful little meatballs can be used in anything and they will make it better every time! The evil in the name comes from it's spice, crushed red pepper to be exact. (Well, and the fact that they have bacon in them also) In order for me to enjoy these little puppies however, I had to omit that. Still amazing. And again, so versatile, make 'em hot, don't make 'em hot! Hahahaha. The magazine I found this in gave credit to Kelly Jaggers at EvilShenanigans.com. Enjoy the rest of your week. See you on Thursday!
"Super Evil" Bacon Meatballs
1 lb hardwood smoked bacon
12 oz ground beef, 80% preferred
8 oz ground pork
2 tsp. salt
2 tsp. smoked paprika
2 tsp. dry oregano
1/2 tsp. ground fennel (wasn't able to find to purchase)
1/2 tsp. freshly cracked black pepper
1/2 tsp. (or more, to taste) crushed red pepper (Hot!)
1 egg
Cut bacon into 1" pieces. Pulse in a food processor until it is evenly ground. In a large bowl, combine bacon with remaining ingredients. Scoop into 1 1/2" meatballs, making sure not to compress while shaping. Place on a parchment lined pan, and chill, uncovered, for at least two hours. Later, heat a non-stick skillet over medium heat. Working in batches, add meatballs and brown thoroughly on all sides. Bake at 400° until meatballs reach an internal temperature of 160°, about 10-15 minutes.
Hello All and Happy Tuesday! Prayers to those that need them. I made this recipe for mom and dad last week and it was one of the few that they actually ate all of, lol. They are little eaters and when I make casseroles I normally have to cut them in half, not this time! Super easy and delicious. Found the recipe at the Kraft website! Have a great week! Look forward to seeing you on Thursday! Thanx for stopping by!

Hello all and Happy Tuesday! Prayers to those that need them. Great to see you, hope your week is going well. Mine, busy. Soooooooooooo, hoppin' back on that old Slow Cooker wagon, LOL! I am so glad the temperatures have finally dropped some. So I found this gem at eathomecooks.com and I'm super glad I did. Busy much? Fall back on this all the time. Super easy and so much flavor. I hope the rest of your week goes quietly. We had our beef with plain white rice and some steamed broccoli on the side. I think teriyaki and broccoli go together brilliantly! Short and sweet I am getting ready for an interview!
My aunt used to make this all the time. When I was little I would go stay at her house for a few days at a time. So I got to help make it often. I had to do some revamping for my Asylum Residents though. So it was easier to share the scribbled recipe straight from the family cookbook.
I don't know if you knew this but way at the bottom of the page you will find Labels. Every time we add a recipe we try to label it with the main ingredients. If you are on your mobile device at the bottom is a link for the Web version. You will have to go there to see the labels.
Don't forget to share your recipes at ourasylum@outlook.com! We'd like to do a follower recipe once a week!
So I had told you previously I was going to try to share recipes that my mom/grandma used to make when I was little. They were simple ingredients that could be found in our small town 3 aisle (hey, they are long aisles;) grocery store.
When I was really little there was an amazing group of people we went camping with. I really don't remember it, but all the stories of me hopping from camper to tent to camper looking for food and being fed well, are still being told!
This isn't just a camping dish but a great one for the grill or oven as well!
This comes from sixsistersstuff.com (it was the closest I could find to my mom's).

I am sooo going to be in trouble with Saucy when she comes back! She is never going to let me be in charge again! Porcupine Balls, Cow Pies and now this? Shhhh... maybe she wont read the blog while she is gone and I will get away with it!
Today I am honoring our military soldiers who have had to eat this dish. This is a dish that my mom served several times, I always made faces while eating it, but once I got past the look I usually ate it all!
Are you ready for it? $h!t on a shingle (SOS), for our more polite readers Stuff on a Shingle works as well. There is a great website dedicated specifically to this dish. If you are interested in the history and seeing some of the original recipes the military used back in 1901, or for more versions, go HERE to check it out! It is an interesting read. I found out that the British Royal Navy calls this $h!t on a Raft!
So I am going to give you three different ways to make this dish, because not all of us can afford chipped beef! If you think this isn't a healthy dish, head to the last recipe! We cover all the bases here!
The first recipe is for sausage or beef. If you haven't used Food.com I recommend you try it! They have a feature for serving sizes. You enter in how many servings you want and they will recalculate the recipe for you! The recipe below is for 6 people. The note at the bottom of this recipe made me laugh, so I left it included!

In a medium saucepan over low heat, melt butter. Whisk in flour all at once to form a roux. Whisk in milk, a little at a time, increase heat to medium-high, and cook, stirring, until thickened. Bring to a boil, stir in beef and cayenne, heat through and serve over toast.

I don't know where this one comes from, I found it in the recipe box!
In the military this dish is traditionally served with peas. Surprisingly, they do work well together. The plating doesn't look great, but this is a very good dish!
Now if everyone could say a quick prayer for Saucy while she is taking care of her family and that she doesn't kick me out of the Asylum when she gets back! I wouldn't know how to live in the "real world"!
Rainy day here at home! But the rain is much needed! I miss my sunshine, I love the stuff, can't ever get enough of it lol. Anyway, back inside the Asylum where we belong It's a lazy kind of day so we have a simple recipe for today. This one comes from our friend Racheal Ray. She comes up with some funny names sometimes too and this one is no different, well in my opinion lol! With this one the name comes from the fact that she says this recipe is a combination of everything good about going to a baseball game! Food wise anyway lol! Hope you enjoy! :D

Ahhhh the summer has officially begun! Great now it's uber hot and millions of mosquitoes here in Florida. Well, there is always something lol. Pay the price for living in paradise. So I hope everyone had a wonderful Memorial Day. And I would like to personally thank all servicemen and women and their families for all they do! Freedom is never free, we are so blessed to have it!
So after a long weekend of cookouts and beer I figured I would offer up something yummy but very simple for today's recipe.! I found this recipe in the Spring 2008 issue of food & family and have been using it ever since. It is also good for the budget. So, yummy and cheap, hey you can't beat that. I know the Spicy German and I are always trying to save a buck! (Just to spend it somewhere else of course!) :D. So they call this one "Cheddar Macaroni Beef Casserole". Hope everyone can get out of their straight jackets long enough to stuff this one into their face! :D Enjoy!
Cheddar Macaroni Beef Casserole
Prep time: 20 minutes
Total time: 30 minutes
1 pkg. (7.25oz) Kraft Macaroni & Cheese Dinner
1 lb lean ground beef
1 can (14.5oz) Italian-style stewed tomatoes, undrained (I used fire roasted diced tomatoes)
1/2 tsp. dried oregano leaves or dried basil leaves
1/2 cup Kraft Shredded Cheddar
1. Preheat oven to 400° Prepare Dinner in large saucepan as directed on package, omitting butter. Meanwhile, brown meat in large nonstick skillet on medium high heat; drain. Add tomatoes and oregano; mix well. Bring to boil. (at this point you are really just combing and heating not boiling)
2. Add meat mixture to Dinner; spoon into 9" square baking dish. Sprinkle with cheese.
3. Bake 10 minutes or until cheese is melted and casserole is heated through.
Makes 4 servings!
** As you can tell this recipe most obviously originated at Kraft! Any product you are satisfied with will do just fine!
