QUINOA!

Happy Thursday and thank you for stopping by the Asylum.  We have the weekend in sight again, amen. Lol!  So today's recipe I used because I had leftover quinoa.  Well, that and it sounded good ;-) .  We had ours along side a burger patty and it was great!  Filling but light to eat, really good.  Hope you give it a chance.  I've read some great things about Quinoa.  It was a great dinner!

Ingredients

  • 1 cup cooked quinoa
  • 1/3 cup canned low-sodium black beans, drained and rinsed
  • small tomato, chopped
  • scallion, sliced
  • 1 teaspoon olive oil
  • 1 teaspoon fresh lemon juice
  • Pinch of salt
  • Pinch of freshly ground black pepper
Preparation
In a medium bowl, gently toss all ingredients to combine.
