I'm going to be in trouble...

I am sooo going to be in trouble with Saucy when she comes back!  She is never going to let me be in charge again!  Porcupine Balls, Cow Pies and now this?  Shhhh... maybe she wont read the blog while she is gone and I will get away with it!

Today I am honoring our military soldiers who have had to eat this dish.  This is a dish that my mom served several times, I always made faces while eating it, but once I got past the look I usually ate it all!

Are you ready for it? $h!t on a shingle (SOS), for our more polite readers Stuff on a Shingle works as well.  There is a great website dedicated specifically to this dish.  If you are interested in the history and seeing some of the original recipes the military used back in 1901, or for more versions, go HERE to check it out!  It is an interesting read.  I found out that the British Royal Navy calls this $h!t on a Raft!

So I am going to give you three different ways to make this dish, because not all of us can afford chipped beef!  If you think this isn't a healthy dish, head to the last recipe!  We cover all the bases here!

The first recipe is for sausage or beef.  If you haven't used Food.com I recommend you try it!  They have a feature for serving sizes.  You enter in how many servings you want and they will recalculate the recipe for you!  The recipe below is for 6 people.  The note at the bottom of this recipe made me laugh, so  I left it included!

1 1/2 lbs ground beef or 1 1/2 lbs jimmy dean's hot sausage
3 cups milk
6 tablespoons butter
6 tablespoons flour
3 teaspoons salt
1 1/2 teaspoons pepper
9 slices whole wheat bread

   Brown the ground beef or sausage, drain and set aside. Be sure to season the ground beef with a little salt and pepper.
   Melt butter in sauce pan. Add flour and stir till butter/flour mixture is bubbly.
   Add milk, salt, and pepper.
   Stir constantly until thick and bubbly.
   Add meat and stir.
   Serve over whole wheat toast. Great over biscuits as well.
   Note: For an evening meal substitute chipped beef.

        In a medium saucepan over low heat, melt butter. Whisk in flour all at once to form a roux. Whisk in milk, a little at a time, increase heat to medium-high, and cook, stirring, until thickened. Bring to a boil, stir in beef and cayenne, heat through and serve over toast.
 
 
Healthy SOS
 I don't know where this one comes from, I found it in the recipe box!

• 2 (2 oz) packages of thinly sliced Chicken or Turkey
• 1 onion; chopped
• 4 Tbsp olive oil
Molly McButter Sprinkles (optional)
• 4 heaping Tbsp all-purpose flour
• 4 cups milk
• Hearty healthy bread; choice
• Salt, Pepper and Garlic to taste

 Heat the olive oil; add the diced onions and sauté. Tear the thin slices of meat into little pieces and add to the onions. Stir around until coated with the olive oil and continue to sauté until the onions.
 Add the flour and stir until the olive oil is absorbed. This is making a rue.
 Pour in the milk and stir until it makes your white sauce gravy. Turn on low heat and let simmer.
 Make your toast, with your good healthy bread.
 Put your warm toast on your plate and pour your white sauce gravy over the top.
 
In the military this dish is traditionally served with peas.  Surprisingly, they do work well together.  The plating doesn't look great, but this is a very good dish!

Now if everyone could say a quick prayer for Saucy while she is taking care of her family and that she doesn't kick me out of the Asylum when she gets back!  I wouldn't know how to live in the "real world"!

  1. we called it chipped beef and used beef lunch meat and it one of my top 2 favorite foods ever!!!!!!!!
