I thought I would share my Easter Menu with you as well as a recipe for one of the items. We are not able to go home for Easter this year so we are getting together with our neighbors, just like last year, and we love it! We have two boys and they have two girls, so it's nice to have some girls in the area.
Grilled ham and Pineapples
Mashed Potatoes
Easy Banana Cream Pie
Apple Pie
Toffee Crackers (recipe below)
Hawaiian Rolls
Hard Boiled Eggs
I also have a ton of sugar wafer cookies and my favorite cookies from the German aisle. I believe the neighbors are bringing corn on the cob and fruit. I love to bake for holidays, so I was thrilled that I get to make lots of food! Of course there will be lots of Easter candy as well, that is if we don't eat them all before then. I can't wait to try Saucy's Easy Banana Cream Pie either. I wanted her with me for Easter so of course her food was the way to go!
Toffee Crackers or Chocolate Toffee Cookies
1 cup brown sugar
2 stick of butter
2-3 sleeves of saltine crackers
Chocolate Chips (optional)
Bring the brown sugar and butter to a slow boil, stirring constantly so you don't burn it. Place the crackers on a sheet pan with sides or in a cake pan covered with tin foil. Poor to brown sugar mix over the crackers and place in the oven at 325 for 7-8 minutes. Let cool and remove from tin foil.
If adding chocolate add immediately after removing from oven. Shut oven off and put the pan back in the oven. When it melts spread evenly, remove and let cool.
