Hello Crazies! Oh how I have missed you!

Good beautiful afternoon!  I have so missed you guys!  Bwahahahhhhaaaaaaaaaaa!  I'm still having family issues and I'm still not home but the Spicy German has her hands full and you know that's what friends are all about! We try to prove that here everyday by offering clean jackets, bleached and crisp lmao! :D!  We love to live crazy and free and eat well!  So glad you have stopped by to join us.  Today's sandwich is great for inside or out.  The instructions call for the chicken to be broiled we have also made it on the grill!  And what better place to be for the Holiday!?  Ok, gotta get back to my real life.  I hope you all have a wonderful holiday and I THANK ALL the families, men and woman who serve for us everyday to give us our freedom!  This recipe comes from a book of chicken recipes put together by Gold Kist Farms.

Bistro Chicken Sandwiches

2 1/2 tablespoons olive oil
1 teaspoon lite or regular soy sauce
4 small or 2 large Gold Kist Farms boneless, skinless, split chicken breasts
1/2 teaspoon Italian seasoning
1/2 teaspoon lemon-pepper seasoning
1/2 cup mayonnaise
1/2 cup fresh basil leaves, loosely packed
1/2 cup torn spinach leaves, loosely packed
1/4 cup grated Parmesan cheese
2 tablespoons coarsely chopped walnuts
1 clove garlic, coarsely chopped
4 sandwich buns, split
4 slices provolone cheese
4 thin slices red onion
4 tomato slices

Preheat broiler.

Place olive oil and soy sauce in shallow bowl and beat to combine.  Dip chicken in mixture, coating both sides.  Place chicken on rack of broiler pan and sprinkle both sides with Italian and Lemon-pepper seasonings.  Broil in preheated broiler 4-6 inches from source of heat.  Cook about 5 minutes on each side, turning occasionally, until lightly browned, fork tender and no longer pink inside.  Remove from broiler, set aside and keep warm.  

Place mayonnaise, basil, spinach, Parmesan cheese, walnuts and garlic in food processor or blender.  Process on and off until smooth.  Spread mayonnaise mixture on both sides of inside of buns.  Place 1 chicken breast (or half if larger breasts are used) on bottom half of each bun.  Top with provolone cheese, onion, tomato slice and top half of bun.  Enjoy!
