Cow Pies!

If you follow our Facebook page you may have seen where I mentioned today would be cows, cow pies to be exact!  This is a Weight Watchers recipe that I found worth 2 points per cookie.

Cow Pies are not a favorite here at the Asylum, but I really like them.  They are quick to grab and healthier option than most snacks in our house!

2 cups (12oz) Milk chocolate chips (NOT SEMI)
1 TBSP shortening
1/2 cup raisins
1/2 cup chopped slivered almonds
 
In a double boiler over simmering water, melt the chocolate chips and shortening, stirring until smooth.  Remove from the heat, stir in raisins and almonds.  Drop by tablespoonful onto waxed paper.  Chill until ready to serve.
 
 
Here is another version that isn't as healthy, but tastes so much better!  They call them Cow "Piles" instead of "Pies".  I have also seen where this version is called Dinosaur Drops/cookies.

In a medium saucepan, combine the sugar, butter, cocoa, milk, and vanilla. Bring to a slow boil and simmer until the sugar is completely dissolved. Remove from the heat.
Stir in the peanut butter and 2 1/2 cups oats. The mixture should be thick; stir in additional 1/2 cup oats if too runny. Let the mixture stand for about 10 minutes to cool.
Line a baking sheet with wax paper or parchment paper. Drop the mixture by heaping tablespoonful onto the lined sheet. Let the cookies stand at room temperature for 1 hour to firm up. Store in an airtight container.
