Grandma's Goulash

Well, hello all.  Man I don't even have the energy to tell you about my day.  Suffice it to say my mom will take all the thoughts and prayers she can get.  So no funny business from me tonight but I wasn't going to let you guys down!  I made this for dinner.  Dad found it in mom's old recipes and asked me to make it.  I'm glad I did.  I hope all the folks at your place enjoy it too!  It seems Mom found it in the Roanoke Times Newspaper in January of 2013.  There is no name associated to it otherwise.

Grandma's Goulash

1/2 Box elbow macaroni
1 lb ground beef
1 cup finely chopped onion
1 green pepper, finely chopped
2 to 3 stalks celery (I'm not a big fan so I only used 2)
2 14 oz cans of diced tomatoes
1 small can of mushrooms
1 tsp Hungarian paprika
Salt and pepper to taste


Cook macaroni in boiling water until al dente (not completely done).  Drain and set aside.

Cook ground beef until just browned.  If you used a fatty blend that released a lot of grease, drain most of that off.  

Stir in green pepper, onion and celery and saute until vegetables start to get tender.

Add tomatoes, mushrooms, paprika and macaroni.  Stir to combine, then cover and reduce heat to simmer.  Simmer for 25 minutes.

Season to taste with salt and pepper.
