Apple Pancakes

Happy Thursday!  Quick note today, lots going on!  So very glad to see you all.  Today's recipe is from "The Flat Belly Diet" and has a lot more flavor than I thought they were going to.  I think it's a great time of the year for them as well.  Like I said the other day Dad is a pancake fan so this was right up his alley.  Enjoy!

Apple Pancakes

2/3 Cup whole wheat flour
2/3 Cup unbleached all purpose flour
1/3 Cup cornmeal
1 Tablespoon baking powder
1 teaspoon ground ginger
1/2 teaspoon baking soda
2 Cups nonfat plain yogurt
3/4 Cup fat free egg substitute
2 Tablespoons canola oil
1 apple, peeled, cored and coarsely grated
1 1/2 Cups pecans, chopped

In a large bowl combine the flours, cornmeal, baking powder, ginger, baking soda, yogurt, egg substitute and oil until combined.

Fold the grated apples into the batter.

Coat a large nonstick skillet with nonstick cooking spray and heat over medium heat.

For each pancake, spoon 2-3 Tablespoons of the batter into the skillet.  Cook for 2 minutes or until bubbles appear on the surface and edges set.  Flip to other side.  

Cook until lightly browned, about 2 minutes.  Repeat with the remaining batter.

Top each serving with 2 Tablespoons of the chopped pecans.
