Luck O' the Irish Cream Pie

Top of the Morning to you!  Happy St. Patrick's Day!  Prayers to those that need them.  I hope your week is going great.  Tomorrow is Friday woo hoo!  Hey, don't have too much of that green beer tonight, lol! :D.  In staying with our theme this week I am still using my Irish cookbook and today's dessert is yummy!  It's been a couple of years since I have made it, but remember it well.  Life style changes and all, you know.  Pie isn't really included that often.  Hope everyone at your Asylum is well, happy and enjoy the daylights out of this pie!

Luck O'the Irish Cream Pie

2 cups chocolate cookie crumbs
6 tablespoons butter, melted
7 tablespoon Irish cream liqueur, divided
4 ounces cream cheese, softened
2 tablespoons milk
1 package (4 serving size) instant white chocolate pudding and pie filling mix
2 cups thawed frozen nondairy whipped topping
Additional whipped topping and chocolate curls (optional)

Preheat oven to 350°F.  Combine cookie crumbs, butter and 3 tablespoons liqueur in medium bowl.  Press evenly on bottom and up side of  9" pie plate.  Bake 3 minutes; cool completely on wire rack.

Beat cream cheese, milk and remaining 4 tablespoons liqueur in large bowl.  Add pudding mix; beat until well blended.  Stir in whipped topping.  Spoon filling into prepared crust.  Refrigerate 1 to 2 hours or until firm.

Just before serving, garnish with additional whipped topping tinted green and chocolate curls, if desired.
