Nancy's Potatoes

Today is a very busy day!  I have a ton of things to do at home and then there is a function at hubs job.  Tonight I get to go dancing with my youngest Resident at his school!  I am very excited.  Apparently we will be able to purchase duct tape items.  Yeah it's going to be pretty awesome.  That was sarcasm if you missed it!  Seriously, I am excited to be doing something with just him.  It doesn't happen often. 

Today's recipe is a great one for family get togethers!

Nancy's Potatoes
3 lbs. Red Potatoes or 6 cans whole new potatoes, drained
Large Onion, chopped
½ stick real butter
½ c. Mayonnaise
8 oz. Cream Cheese, softened
1 pkg. Dry Ranch Dressing Mix
Salt & garlic powder to taste
Milk for consistency (1 c. +)
½ c. grated Cheddar Cheese
 
Wash fresh potatoes. Peel potatoes (if desired), cut into bite sized pieces and boil about 8 minutes until fork tender. Drain potatoes and place potatoes into a 9x13 pan.

In a large skillet, sauté chopped onion in butter. Stir cream cheese, mayonnaise, ranch dressing mix, salt and garlic powder into sautéed onions. After blended, add milk for desired consistency.

Add creamy dressing mixture to potatoes in 9x13 baking dish. Stir to mix. Sprinkle top with cheese.

Bake at 350 F for 30-40 minutes.

Makes 15 servings
