Authentic German Potato Salad

My husband requested that I make this.  I made it years ago, but he doesn't' remember. We have an amazing place here in the Black Hills, located in Hill City, SD and it is called the Alpine Inn.  For lunch they serve authentic German food. In the evenings they give you 2-3 steak choices and two sides.  That's it, they also only take cash!  It is an old house that has been turned into a restaurant, with tons of German art work and history on the walls.  You may get a table in the sunroom, parlor or the back room (which must have been a sitting room and a bedroom). Below is a recipe that I believe is close to theirs.  My hubs and I dissect it every time we eat it in hopes of tasting each ingredient.  So, I think this will be the recipe I make this weekend for him. I think I even have brats and sauerkraut to serve too.  I may need to make a trip to the commissary for some spaetzel even!

Authentic German Potato Salad

 

Ingredients:

3 cups diced peeled potatoes
4 slices bacon
1 small onion, diced
1/4 cup white vinegar
2 tablespoons water
3 tablespoons white sugar
1 teaspoon salt
1/8 teaspoon ground black pepper
1 tablespoon chopped fresh parsley

Directions:

Place the potatoes into a pot, and fill with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, and set aside to cool.

Place the bacon in a large deep skillet over medium-high heat. Fry until browned and crisp, turning as needed. Remove from the pan and set aside.
3.
Add onion to the bacon grease, and cook over medium heat until browned. Add the vinegar, water, sugar, salt and pepper to the pan. Bring to a boil, then add the potatoes and parsley. Crumble in half of the bacon. Heat through, then transfer to a serving dish. Crumble the remaining bacon over the top, and serve warm.
