Sweet and Salty Coconut

I found bags of coconut on the clearance rack at my grocery store. They don't expire until May, but I'm guessing they over stocked for the holidays. I got them for $0.69 each!  So I went to Pinterest and I found several versions of this recipe and it looked so yummy and will be great over the baked apples and ice cream too!
Coconut has so many health benefits!
Sweet and Salty Coconut
1/2 c coconut oil
1 bag coconut flakes
1 tsp sea salt or less if you'd like
Preheat oven to 300 and move your rack to the highest position.
Melt your coconut oil in a glass pan in the oven, or be lazy like me and put the jar in the microwave.
Mix all ingredients, using your hands as the oil is great for your hands and cuticles!
Place in a glass cake pan or baking dish. Bake for 8-15 minutes stirring every three to keep it from burning and to toast all of the coconut! The more it is spread out the less time it will take. So if you want to move faster use a cookie sheet, but watch it carefully so you don't burn it!
Put on paper towels to cool.
Throw it in your oatmeal, eat it plain, add to trail mix, whatever just eat it and love yourself!
