Cottage Cheese Salad

Well hello everybody!  Hope this finds you braving your way through Thanksgiving week!  I was at the store today to get the last of my ingredients (hopefully) and it was packed.  And so the holidays have arrived.  My recipe may be a repeat but I have decided that even if it is I'm good with that.  That is how much we enjoy this stuff.  Lots of people are fans of the waldorf salads, personally I'm not a fan.  This recipe is probably the closest you can get to that type of salad though.  The recipe is called Cottage Cheese Salad.  Our residents lovingly refer to it as green stuff.  The green comes from the lime jello that is used.  This year my beautiful granddaughter asked me if we could have pink stuff.  But of course!  To make this happen I chose the raspberry flavored jello.  Beautiful color if I say so myself! :D.  And the tradition continues!

Spicy and I will be enjoying our families, as we hope you will be, on Thanksgiving so we won't be here.  May all your families and homes be blessed this Thanksgiving!  See you on Saturday!

Oh, and I have absolutely no idea where this recipe came from, except from my mom.  LOL.  I'm sure she didn't create it but unfortunately in her condition we will never know exactly where it came from.  Enjoy!

Cottage Cheese Salad
AKA  Green Stuff

1 small box of lime jello
12 oz small curd cottage cheese
1/2 cup pecans
16 oz crushed pineapple, drained
1/2 cup coconut
1/2 cup maraschino cherries, quartered
Large tub of Cool Whip


Mix jello and cottage cheese till totally blended.  Then add pineapple, pecans, coconut and cherries, mix.  Fold in Cool Whip.  Being cold is important and it also does well with time.
