Potatoes

Here is a great side dish or even a great way to start your potatoes for potato salad! This is another Unofficial Harry Potter cookbook recipe!

Boiled Potatoes

2-3 lbs small potatoes 

2 TBSP Tarragon Vinegar

1/2 TBSP sea salt or kosher salt

1/4 cup olive oil 

Wash and Boil your potatoes with skins on.  Usually about 20 min to cook. Test with a fork. If it easily goes in they are done! Drain and add vinegar, oil and salt. Stir to coat! So yummy!
